I have 3 hard drives...
The first one is for the Vista Ultimate OS and most program applications.
The second hosts Windows Server 2008 - however, I don't boot 2008 much - and since Vista can easily access that drive - it more acts as storage for my photos and creating and editing home videos. These personal effects get backed up two external drives which are mirror copies of one another once a month.
The 3rd hard drive is where all my Vista Media Center recorded television goes (I can record some insane amount of television - like 300 hours - on the 'good' quality setting.) The third drive is decidated to this purpose, the optimization maintained by Vista Media Center, and thereby removing any fragmentation that would affect the OS if the television was on the OS drive.
And that machine is ALWAYS on... only because Linksys didn't include WOL functionality in their media extender that would be able to wake the PC up whenever someone wants to watch TV - the XBOX on the other hand does have this functionality.

Partitions or hard drives?
I personally don't really see the point for a seperate HDD for each OS. I can understand the benefit (if one goes down and destroys all the data on that drive, the others aren't affected), but the costs for me are personally not worth it.

Four hard drives, currently 5 partitions. When I stop being lazy, I'll do some reinstalling and wipe the extra partition... but the reason for my set of hard drives is performance. With XP installed on a 36gb Raptor, my boot times will be quite fast, which I like... file paging will go on my other 36gb Raptor, again for its' speed. All of my games and programs are currently installed on a 320gb 7200RPM drive, and all my music and videos and such is on the other one. Designed to split the read load without relying on striping and probable data loss.
