How about a task management system.
Project Managers can set tasks for the people that they manage. The staff can update status, etc but cannot set tasks themselves. Kinda like a scaled down, but more useable version of MS project.
You can make it as simple or complex as you like. You might even be able to sell it if it is good enough.

Sort of like what JamesM has said, I think you should make an application to record the details of stuff.
The reason I say this, is because you sound like you're in college or something. So your lecturer/teacher would be receive maybe a couple of hundred projects from students.
If you made an app which stored information about them, eg. In columns ;
Student Number | Project Title | Notes ...
01284 dajdlkaj s;adkasl;dk;ld
29292 jdofijsdof odsjfoisdj
Or something like that.
If the lecturer found it useful, they might use it to record the information about the rest of the projects.
You'd receive biiig brownie points for that

using winsock
I dunno but something that's cool is making something that goes over the network or the net using winsock and TCP/IP
something like chat like Mirc. Or FTP
but i dunno if that'll test ya maths coz i doubt it.

How about something to do with physics/applied maths ?
Do something like projectiles, linear motion, relative velocity or something like that.
Or perhaps, take an atom (or planet, or any body), and show how things would orbit it, given their different masses.
Show what force of gravity is in effect :
F = GMm/(r ^ 2)
Something like that has always looked cool to me.
Perhaps you could show our own moon's orbit, and try and estimate when it might decay ?
Anything to do with physics always impresses (imho).

My god, how can you hate physics.
Anyway, how about a currency converter then ?
Simple as falling off a log, but it can look impressive.
Especially if you can get the latest exchange rates off the web at the time of conversion.
