I have decided I am to cr*p to do up my car myself - anybody know of anyone in the whole Ireland or UK who could do a full restoration on a Triumph GT6? I have about EUR10K to spend...

Don't give up. Start with the frame and work your way from there.
I don't know about over there but here it is generally cheaper to buy one in good shape than it is to pay someone to restore one. I've built 2 Triumph TR6s and a spitfire. They are not overly complicated if you are good at paying attention to detail and have room to work on one. You should be able to find most of what you need for well under 10k. If the motor is in decent shape. WHat manuals are you using?

It's more the case of not having the time nor access to a decent garage - decided to devote more of my time to what I am good at (programming) and use this to pay experts to do what I'm not so good at.

I can understand that, I haven't had time to touch a toolbox in months. My poor harley is still sitting in pieces on my garage floor. Good luck. You shouldn't have a very hard time finding someone to do it for you.

Where did you get the idea that a GT6 qualifies as a classic?

I attribute all my knowledge to Sessame Street - this snippet is no exception.
