Email on company PC
I know it's easy for your company to monitor all computer activity.
Is it possible for them to monitor what you do through hotmail?
At my last company "CompUSA" we could monitor live pc activity and phone calls.

They can easily monitor keystrokes, and visits to hotmail.com i wouldnt think it would be difficult whatsoever to gather the information displayed on the screen.

There's a piece of what could be considered spyware that can monitor your screen over the network, kinda freaky but fun in Remote Control mode

SpectorSoft - http://www.spectorsoft.com/ - works really well.
Also, a more hardcore thing to do would be to configure fort forwarding on a Cisco switch so that you can packet sniff all ports that carry traffic in and out of your network, like routers, etc. Good for Network Intrusion Detection as well.

I have books for sale: "MCSD in a Nutshell" and "VB Distributed Exam Cram" - PM me for details. Will also trade for a decent ATX Pentium 2 MB/CPU/RAM combo.

I don't think they monitor us that much but it just makes me sick to think people can read my email

If it's that personal and/or that "against the rules", don't do it AT WORK.
Pretty simple man. Unless I'm missing something, you are using company property on company time to check your personal email.
While I think most places don't care for the occasional visit to hotmail.com or what have you,
if you have to hide the fact that you're doing it, you shouldn't be doing it... right?

Use PGP, it works in Outlook.
And it's currently 'nearly' inbreakable.
