Having just returned from a trip to Ireland, here are a few tips... Hiring a car is definitely a good choice, but I hope you can drive manual/stick. Automatic transmission cars are hard to come by in Europe, but not impossible; just don't expect them to be anything amazing.
Dublin:
- The Jedi Library at Trinity College. It's actually the library above the Book of Kells, but it was used as the basis for the Jedi Library in Star Wards Episodes 2 and 3
- Free walking tour, and they also do a good pub crawl...
- Guiness factory tour
Other parts of Ireland:
- Gap of Dunloe/Ring of Kerry
- Cliffs of Moher/Galway
- Blarney Castle, with its poison garden
- Waterford
- Adare
Accommodation is not hard to find with youth hostels and B&B both offering decent accommodation at reasonable prices. Sorry to hear you won't be going up north, as some of the best views are up along the Causeway Coast and Giant's Causeway... would have suggested the Bushmills distillery if you were up there.

Thanks for the suggestions. Manual shouldn't be a problem, it practically the only shift I've driven except on two rentals that had automatics. Driving on the left side would be a much bigger issue :) I've ready about Ring of Kerry in my web research regarding the trip, but it's a bit far from Dublin. Would you say it would be feasible for one day drive from Dublin to there and back?

It's feasible. Kinda depends how much you like driving! Estimated journey time Dublin to Killarney's 3.5 to 4 hours so add in another couple for milling about and then the return journey you'd be at the wheel getting on for 10 or 11 hours. Early set off, lots of breaks, it's doable.

I'll definitely think about it. The scenery there really looks great. Even a 12 hour drive with breaks doesn't sound bad to me. I've done more. Plus I really like to drive even if I don't have a set destination. I'm off to Romania on Saturday for a 1500 mile, 5 day motorcycle drive over Carpathians and the famous Transfagarashan road.
I'll probably do Ring of Kerry, Blarney Castle in one day, then another day Waterford, Wexford, Kilkenny and circle back on the east coast. Maybe adda third day for Galway/Cliffs of Moher if we have the time.
