How about a Windows Service, in C#, that monitors a particular folder for activities for New file adds and File Deletes?
I've seen "how do I do that" questions on this a few times.
Could you build an app that takes insurance policy data from an Ingenium database and converts it into XML files that map to the ACORD Vendor Schema?
Then email it to me so I can give it to my boss.

Create a service, using WCF, that you can communicate with using TCP rather than HTTP and host it in IIS.
(You'll need IIS 7 for that, though)

Here's a simple one but requires a bit of digging to figure out how to do properly:
An app that takes any AVI file, decodes it, and allows you to re-encode it using whichever codec the user picks.
I've seen that question asked a few times and have always been at a loss to help. The DirectShow API is kinda cryptic and while there's a lot of info out there on DirectX programming, there's not much it seems for DirectShow. Seems a lot of people are at a loss on it too since those posts usually drop off the horizon of page 2 without a single response from anyone in the forums.
An offline version clone of SVN. That stores the repository in one flatfile, like an access file or a .db file.
I would enjoy to see something like that....
