I'm about to take the IE 8 beta off my machine. I was presured by the IE product manger last week at MIX to install it. I've regretted it overall. The Activities feature is cool, but as you've noticed, the beta is NOT READY FOR PRIME TIME. Text boxes are impossible to select and cursor around in and the spped is horrible. Layout overall is not as bad as it could be, but it simply isn't ready (in my opinion) for daily use.
Of course, this is a beta release aimed at developers and not the masses, so you shouldn't expect perfection.
I asked our developers last week about IE 8 testing on our sites. I'm still working to understand what our internal plan is; however, in the mean time, it is a beta product, and a beta product that is going to seriously change (in my speculation), so for now we'll likely sit and wait for the next beta before making whole hearted changes on our sites.
I do want to create some Web Slices for our sites too :D

No code should be modified to cater for IE 8 until it reaches RC status in my opinion.

You're right, this should go to Connect. Their reporting tools aren't exactly the greatest though. It looks like a geocities webpage when you want to report a real-world site.
