I normally end up creating an html document with a table that has 1 row and 2 columns, each of which is 1280*1024px in size. Then plonk a single 1280*1024 image into each cell and use the html document as your background...
Cut a JPG in half and use one half for the left screen, the other half for the right screen. Simple really :D

Although Windows 2000 doesn't support this unless you get the latest SP.
The best place i've found them is at DeviantArt.com They have a whole section devoted to Dual Screens.
