I guess that depends on how much controll they want. If you have a client on your side, then that client can do exactly as much as you can do with your current log in. So if you are logged in as root/admin, the server can (in theory) send all kinds of commands to the client and ask it to do it.

None, unless the client has some flaw in it that allows some kind of crazy exploit.
Your controls changing is more likely a bug switching it back to defaults
Did I missunderstand the question then? If you are playing CS, and the deveopers of CS adds some code to "Steamer" or what it is called to do someting to your PC, then they could do that. But doubtly they would.
If he was talking about others connected to the server, then Cander is right, unless those who made the server and client, left options to do som in the code so the admin of the server could use them.

I wouldn't worry about people messing with your comptuer while you're playing on their server (especially if they're commercial games) like cander said, the i'm pretty sure that the only thing that could give someone the ability to change things on your computer would have to be some weird flaw in the code, but i severly doubt that anything like this would really happen
as for you're controls and such resetting, sometimes various mods or server settings can inadvertenly reset your controls, but as far as my experiance goes, it's nothing you can predict and its not that serious
