I moved the thread to somewhere it should be more likely to get an answer. Since the game and graphics section is more of a programming section.

Over to to your question. Well it is not a simple task to perform. Since I am pretty sure Gif doesn't support layers. So the text is merged to the image it self. So you have to actualy get rid of the text that is all ready there by manipulating the picture. I am not great with Photoshop either. But when I try to do stuff like this I usualy use the clone brush (well it depends on what the image looks liket though) and then try to clone away as much as I can of the text without it looking funny. Then I try to cover as much of the text as possible with the new text. And then use pen and brushes to fix it afterwards to make it look more natural.

You cannot change the text directly. You could try writing OVER it with bigger text (easiest way) or painstakingly edit the pixels over it, as the viking said, with clone, or even resorting to pencils in some areas. Make sure the new text you write is in a new layer and that you save it to a PSD file so that you can come back and make modifications later.
