If you go to the Microsoft website you can get a list of all the MOC. I currently have a book called SQL Server 7.0 DBA Survival Guide - ISBN:0-672-31226-3 it's been informative. I've also taken the SQL 7 courses, Database Administration, and Database Implementation and Design. I enjoyed the classes and got a lot of useful info out of them but all that depends on your instructor. Some of them just go out of the book verbatim others will go out of there way to get you the best training possible. The classes are expensive though I fortunately didn't have to pay for them I got my company to. If you want to go down the book route just remeber one book won't have all the info you need and nothing beats actualy using the software.
